Heat oil in a pan. Add mustard seeds, urad dal, chana dal, and peanuts. Once the seeds pop and the lentils turn a beautiful golden brown, toss in fresh curry leaves and a pinch of asafoetida (hing).

Step 3: The Sauté Sequence

To ensure every vegetable is cooked to perfection, add them in this precise order:

  1. First: Add the carrots and French beans, as these take the longest to cook. Sauté for about 3 minutes.
  2. Next: Stir in the eggplant (brinjal).
  3. Finally: Add the capsicum and green peas. Sauté the entire medley until all vegetables are just tender, making sure the beans and carrots still retain a slight, delicious bite.

Step 4: Flavoring
